A Legendary Caribbean Chef Just Opened a New Eatery in Martinique (With a Rum Bar, Too) 


Maybe you’ve tried the foie gras-banana. Or the swordfish. Or just tried one of the best ti’ punches anywhere. If you’ve been to one of Guy Ferdinand’s establishments, you know. 

And now there’s another one: Ferdinand has done it again: the legendary chef from Martinique has added the newest hotspot to his growing portfolio: Aquarium. 

Here, the menu is French Caribbean comfort food: think cochon cooked in aged rum. Colombo de coq. Perfect duck breast. Fresh-caught Dorade. Then there’s the selection of rum: the Tombolo from Saint James. JM Blanc. The Bally 51.5 degree. A new cuvee from Neisson.

It’s the newest addition to the culinary landscape in Martinique, a restaurant and rum bar in the beach town of Marigot on the island’s Atlantic coast, with views of the stunning green hills.

It’s the perfect place to enjoy Ferdinand’s high-level French Caribbean fare — and his unmatched commitment to showcasing artisanal Caribbean rum. 

Ferdinand vaulted to international acclaim with the now renowned beach bar and restaurant Le Petibonum in the town of Le Carbet on Martinique’s Caribbean coastline — an eatery that almost singlehandedly turned Carbet into a travel destination. 

The rums are worth the trip alone.

It’s perched in the hills above Anse Charpentier in Martinique, in an area that’s still one of the island’s undiscovered corners. 

Aquarium is open seven days a week for lunch and dinner. 

The motto is “Nowhere Else,” and if you’ve been to one of Ferdinand’s spots, you know exactly what it means.
